Cathy Owen from Jembaicumbene and Jenny Daniher from Manar have teamed up to form Garlicious Grown, producing black garlic, smoked garlic and powdered garlic.
Cathy says “While not organically certified, our garlic is grown chemical free using permaculture principles, on our farms or by friends in the Braidwood area. The garlic benefits from our cold frosty winters bringing forth wonderful flavour. Purple and white garlic is grown in soil enriched with farm made compost, rice straw mulch and rain.
Black garlic is produced by slow caramelisation with controlled temperature and humidity for over a month. There are no extra ingredients added to the products.
The black cloves end up with umami flavours of sweet molasses and balsamic, without the strong residual garlic taste and are high in antioxidants.
The end product can be used in a myriad of ways in the kitchen – eaten straight or incorporated into dishes.
